As long as you are the author of those routes and you include an acknowledgement to Plotaroute, you can upload routes to WikiMedia.
Your example "I am the author of each RSR recreational cycling route. However, the final *.gpx files were saved using plotaroute.com ( https://www.plotaroute.com/ )." is totally fine.

I would like to create my own project “Rekreacyjna Siec Rowerowa (RSR) - /Recreational Cycling Network (RSR)/ in Wikimedia. The key value of the project are *.gpx files of each recreational cycling route of which I am the only author.

Can I generate each *.gpx file in plotaroute and upload the file to my project in Wikimedia ?

If YES then:

W section Data, in Wikimedia I would like to write: I am the author of each RSR recreational cycling route. However, the final *.gpx files were saved using plotaroute.com ( https://www.plotaroute.com/ ).

Well, I am not sure if the a/m accreditation is OK. If not please advice

I hope your answer will not be : “you cannot upload your *.gpx files created by you in Plotaroute to WikiMedia.
